«Ebraismo» è il termine che definisce la vita religiosa di Israele, il popolo eletto di Dio. Il Dizionario dell'Ebraismo K-Z (che segue la pubblicazione del tomo A-I) intende tenere insieme l'intera storia multimillenaria della tradizione religiosa che si richiama ad Abramo, presentandola in modo globale, in tutte le sue diramazioni e componenti, per così dire «da Adamo ai giorni nostri» e non solo per quel periodo pur centrale, difficilmente delimitabile, che va dalla cattività babilonese all'alto Medioevo. L'Ebraismo, in tutte le sue varietà, designa dunque lo stile di vita seguito dal popolo ebraico per circa tremilatrecento anni, da quando cioè Dio scelse Abramo, il padre di Israele, tra tutte le nazioni. L'Ebraismo comporta l'osservanza rigorosa della Torah, una parola che significa «insegnamento» e che si riferisce all'insieme della Bibbia ebraica, ma soprattutto al Pentateuco (i primi cinque libri). La Torah si presenta in due forme, una scritta e l'altra orale, derivate dall'alleanza che Dio stabilì con il suo popolo di Israele attraverso Mosè, intorno al 1200 a.C.
