S'appuyant sur leur expérience du terrain, les auteurs abordent notamment la gestion de la qualité de l'eau, les méthodes de reproduction contrôlée et d'alevinage pour une dizaine d'espèces de poissons (silure glane, sandre, carpe, brochet, etc.), les soins vétérinaires et l'optimisation de la production.

Cette réédition prend en compte la nouvelle réglementation sanitaire (arrêté du 27 juin 2018 relatif à la préparation et à la mise en œuvre d'un Programme national d'éradication et de surveillance de la septicémie hémorragique virale et de la nécrose hématopoïétique infectieuse).
