El libro está organizado de la siguiente forma: en la introducción, se presenta la importancia del estudio de Gruma y sus aspectos relevantes. En el primer capítulo planteamos el marco teórico, En el segundo se presenta un estudio sobre el nacimiento del mercado de harina de maíz en México. En el tercero se analiza a Gruma en ese mercado. En el cuarto, quinto y sexto se estudian: el origen, desarrollo y consolidación de esa empresa en el mercado nacional e internacional, así como las características de las estrategias aplicadas en esas etapas, y de la nueva administración de la corporación. En el capítulo séptimo se aborda el desempeño de la empresa en las últimas dos décadas y, en los capítulos octavo y noveno, destacamos dos factores que consideramos fundamentales: el cambio organizacional y la innovación estratégica. Finalmente llegamos a las conclusiones.
